Pupcakes
2 cups whole wheat flour
2 tablespoons salt free veggie broth powder
2 teaspoons baking powder
1/3 cup vegetable oil
NRG egg replacer equivalent to 1 egg
1 cup vegetable stock or rice milk
.5 cup peanut butter
Preheat oven to 350.
Combine flour, baking powder.
Add remaining ingredients.
Grease muffin tins.
Spoon batter into tins, about 2/3 full.
Bake 15-25 minutes.
When cool frost with peanut butter.
Top with a small homemade biscuit, if desired (teensy
cookies cutters can be found at many craft stores).
